Virgin olive oil is the richest in vitamin E (a natural antioxidant)

Preparation process of the olive oil: Olive oil is a vegetable oil that is found in small drops inside the cells of the olives. In industrial production, it is subjected to the following phases: 1. Extraction: to obtain the oil the vegetable cells must be broken by crushing the olive with rollers or grinders to obtain a homogeneous paste that subsequently is pressed using mechanical devices that apply pressure to the paste to squeeze out the oil. This pressing may be performed either hot or cold. When it is hot, more oil is obtained, but on the other hand, it needs a greater refining process than cold pressing. Furthermore, the cake or waste that remains after pressing still contains between 10-20% of oil that may also be used. Authorised solvents are used to do this, which drag out the residual oil. It is then heated up to completely remove these solvents by evaporation.
